And what should those carbs come from? Can you handle some grains? Should you eat grains even if you seem to tolerate them? Which grains? Are nuts a good choice for you? Which ones? What about protein sources?

I can tell you from experience that Paleo is about the best diet foundation you’ll ever find. It matches our genetics and our evolution and eliminates the most common dietary allergens and irritants. But there are many, many variations, tweaks and tunes that you can try with Paleo that will make it work that much better. My site isn’t called “Practical Paleolithic” for nothing! :-)

Your tolerance for certain foods changes with season, stress, training and a lot of other factors…

This is one of the major reasons a “cookie cutter” approach to diet will NEVER work and why you MUST BECOME YOUR OWN PERSONAL DIET COACH. No one knows YOUR body better than YOU. And no one can create a better diet FOR YOU than YOU can. I don’t know how many times I’ve recommended to someone who seems to be overtraining that they try some sweet potatoes after workouts and a few other times a week. Relatively often one of them says “Potatoes aren’t Paleo!” My response is WHO CARES!?!?
